Peanut Butter Banana Toast with Honey & Sea Salt

I make this most weekday mornings before work. It is not a fancy recipe. It is a formula, and the formula is very good.

Ingredients

  • 1 thick slice of good sourdough or wholegrain bread
  • 2 tablespoons natural peanut butter (creamy or crunchy)
  • 1 ripe banana, sliced
  • 1 teaspoon runny honey or maple syrup
  • Pinch of flaky sea salt
  • Pinch of ground cinnamon (optional)

Instructions

  1. Toast the bread until deeply golden — you want real crunch to stand up to the toppings.
  2. While still warm, spread the peanut butter thickly. The heat softens it into something almost saucy.
  3. Fan the banana slices over the top.
  4. Drizzle with honey and finish with a pinch of flaky salt and cinnamon if using.
  5. Eat immediately, standing up if necessary.

Cooking tips

  • Room-temperature peanut butter spreads infinitely better. Take it out of the fridge the night before if you refrigerate yours.
  • A very ripe banana with brown spots is much sweeter — worth the wait.
  • Add a scatter of chia or hemp seeds for extra staying power.
