Thick slice of toasted sourdough spread with peanut butter and topped with banana slices, honey drizzle, flaky sea salt and cinnamon

This isn't a fancy recipe so much as a formula, and it's a reliable one for weekday mornings when time is short.

The two upgrades that lift it above lunchbox territory are toasting the bread properly (dark, not tan) and finishing with flaky salt. Fans of this combination will also enjoy the five-minute avocado toast — same energy, savoury side.

Ingredients

  • 1 thick slice of good sourdough or wholegrain bread
  • 2 tablespoons natural peanut butter (creamy or crunchy)
  • 1 ripe banana, sliced
  • 1 teaspoon runny honey or maple syrup
  • Pinch of flaky sea salt
  • Pinch of ground cinnamon (optional)

Instructions

  1. Toast the bread until deeply golden — you want real crunch to stand up to the toppings.
  2. While still warm, spread the peanut butter thickly. The heat softens it into something almost saucy.
  3. Fan the banana slices over the top.
  4. Drizzle with honey and finish with a pinch of flaky salt and cinnamon if using.
  5. Eat immediately, standing up if necessary.

Cooking tips

  • Room-temperature peanut butter spreads infinitely better. Take it out of the fridge the night before if you refrigerate yours.
  • A very ripe banana with brown spots is much sweeter — worth the wait.
  • Add a scatter of chia or hemp seeds for extra staying power.
