Greek Yogurt Berry Parfait
Thick Greek yogurt, mixed berries, golden honey and crunchy granola. A five-minute breakfast that actually satisfies.
A parfait is the kind of breakfast you put on a brunch table and people assume took effort. It didn't. It's yogurt, fruit and granola — but layering it in a glass makes it feel like a proper dish instead of a snack you ate standing at the fridge.
Use full-fat Greek yogurt if you can. The texture is the point.
Ingredients
- 400g (1¾ cups) thick Greek yogurt
- 2 tablespoons honey or maple syrup, plus more to finish
- ½ teaspoon vanilla extract
- 200g (1½ cups) mixed berries (strawberries, blueberries, raspberries)
- 100g (1 cup) granola
- 1 tablespoon chia seeds (optional)
Instructions
- Stir the yogurt with the honey and vanilla until smooth.
- In two tall glasses or jars, spoon a layer of yogurt, then berries, then granola. Repeat until the glasses are full.
- Finish with a drizzle of honey and a sprinkle of chia seeds.
- Eat immediately for the crunchiest granola, or assemble the night before without the granola and add it just before serving.
Cooking tips
- Frozen berries work — let them thaw on the counter for 10 minutes so they release their juices.
- Toast your granola in a dry pan for 2 minutes to wake up the flavour if it has been sitting in the cupboard.
- A spoonful of nut butter stirred through the yogurt makes this even more filling.
