10-Minute Chicken Caesar Wrap

Cool crisp lettuce, juicy chicken, sharp parmesan and creamy caesar dressing rolled into a wrap. Ten minutes, no cooking.

This is my most-made lunch. The dressing takes 3 minutes in a jar, and you can use rotisserie chicken (or last night's leftovers) so there's no cooking involved.

Great alongside my tomato basil soup for a lunch that feels like a treat.

Ingredients

Dressing

  • 3 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt
  • 1 clove garlic, grated
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 anchovy fillets, mashed (or 1 tsp Worcestershire)
  • 2 tablespoons grated parmesan
  • Salt and pepper

Wrap

  • 2 large flour tortillas
  • 2 cups (100g) chopped romaine lettuce
  • 2 cooked chicken breasts, sliced (or 2 cups rotisserie chicken)
  • ¼ cup (25g) shaved parmesan
  • Croutons, crushed (optional but recommended)

Instructions

  1. Whisk all the dressing ingredients in a small bowl.
  2. Toss the lettuce and chicken with 2–3 tablespoons of dressing.
  3. Spread a little extra dressing over each tortilla. Pile the filling down the middle, top with parmesan and crushed croutons.
  4. Fold the sides in and roll up tightly.
  5. Cut in half on a diagonal and eat.

Cooking tips

  • Warm the tortillas for 20 seconds first — they roll without cracking.
  • Dressing lasts 4 days in the fridge. Great on salads too.
  • For meal-prep, keep everything separate and assemble to order.
