10-Minute Chicken Caesar Wrap
Cool crisp lettuce, juicy chicken, sharp parmesan and creamy caesar dressing rolled into a wrap. Ten minutes, no cooking.
This is my most-made lunch. The dressing takes 3 minutes in a jar, and you can use rotisserie chicken (or last night's leftovers) so there's no cooking involved.
Great alongside my tomato basil soup for a lunch that feels like a treat.
Ingredients
Dressing
- 3 tablespoons mayonnaise
- 1 tablespoon Greek yogurt
- 1 clove garlic, grated
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 2 anchovy fillets, mashed (or 1 tsp Worcestershire)
- 2 tablespoons grated parmesan
- Salt and pepper
Wrap
- 2 large flour tortillas
- 2 cups (100g) chopped romaine lettuce
- 2 cooked chicken breasts, sliced (or 2 cups rotisserie chicken)
- ¼ cup (25g) shaved parmesan
- Croutons, crushed (optional but recommended)
Instructions
- Whisk all the dressing ingredients in a small bowl.
- Toss the lettuce and chicken with 2–3 tablespoons of dressing.
- Spread a little extra dressing over each tortilla. Pile the filling down the middle, top with parmesan and crushed croutons.
- Fold the sides in and roll up tightly.
- Cut in half on a diagonal and eat.
Cooking tips
- Warm the tortillas for 20 seconds first — they roll without cracking.
- Dressing lasts 4 days in the fridge. Great on salads too.
- For meal-prep, keep everything separate and assemble to order.
