Baked Mac and Cheese with Crispy Breadcrumb Top
Ultra creamy, three-cheese baked mac with a buttery breadcrumb top. The best comfort food, no shortcuts, worth every step.
A proper baked mac and cheese isn't difficult, it's just a technique. Make a good béchamel, use three cheeses that do different jobs, and give it a crunchy top.

Ingredients
Pasta and sauce
- 450g (1 lb) elbow macaroni or cavatappi
- 5 tablespoons butter
- ⅓ cup (40g) all-purpose flour
- 4 cups (960ml) whole milk, warmed
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- Pinch of nutmeg
- Salt and pepper
- 2 cups (200g) sharp cheddar, grated
- 1 cup (100g) gruyère, grated
- ½ cup (50g) parmesan, grated
Topping
- 1 cup (60g) panko breadcrumbs
- 3 tablespoons melted butter
- ¼ cup (25g) parmesan
Instructions
- Heat the oven to 190°C (375°F). Butter a 9x13-inch baking dish.
- Boil the pasta 2 minutes less than the package says. Drain.
- Meanwhile, melt the butter in a large saucepan. Whisk in the flour and cook 1 minute. Slowly whisk in the warm milk and simmer, whisking, 5 minutes until thick.
- Off heat, stir in the mustard, garlic powder, nutmeg, salt, pepper, and all three cheeses until smooth.
- Fold in the pasta and tip into the baking dish.
- Toss the panko with melted butter and parmesan and scatter over the top. Bake 25–30 minutes until bubbling and deeply golden.
Cooking tips
- Warm your milk before adding — cold milk gives you lumps.
- Pre-shredded cheese has anti-caking agents that make the sauce grainy. Grate your own.
- Undercook the pasta — it finishes cooking in the oven.
